That looks delocious and pretty easy to throw together. I ove the garlic and rosemary duo together !

I've seen rosemary in the produce section, but never knew what it was for. Does it keep for long or do you pick it up on the way home from a fishing trip?

... You can pick it up at the grocery store and keep in the fridge for a few days, or grow your own plants on the window ledge and pick as you need.

It's so weird seeing all these recipes, here in ky we eat everything fried... wouldn't know how to start to fix stuff in the oven but i'm learning... as far as all those spices and stuff you all use, can't find most that around here lol

i guess i could throw in a couple pine cones and acorns

Roasted and smashed, those acornsmay make a nice Crust to a KY catfish! Just mix small roastedpieces in with breadcrumb in the breading process.

Pine NUTS ( Pignol's - Each cone only makes a few seeds) are a prized and valuable addition to many dishes ( imopossible to make a REAL Pesto without it ! If you ave a huge abundance of these things, you could go into business...check out the pics.

If there are any Whole Food Markets there that would be a good place to look. OR you could check the local nursery for basil and Rosemary. EVERY Home needs basil, tomatos Rosemant and Thyme growing IMHO - lo

Seriously, I cook with fruit and citrus spiked sauces because that is what is growing here. When I lived in theNortheast I worked with more wild berries because that is what was around. Use what thearea has in abundance!!

Herbs grow everywhere.

Already on it Big Daddy ! Wife has been on my Butt to save some of my recipies. As if I ever followed a recipie haha - Usually I only dothat un Pastry work as it is more "scientific" Than Hot Food.

Problem is that I look at a piece of meat or Fish and it tells me what to do to it. Hard to write what you feel at the moment to create. Sometimes, It is best for me anyway just to try to scribble down the successes after thay happen and forget the ones that do not.

I wish I had a better understanding of how to cook with these spices and stuff. I get a lot of beautiful catfish filets in the spring but we only fry them.

Hey cookinman, you think you could tell me a few things I need to have in my kitchen to prepare fish in the oven. I see you using all these spices and I'm not even sure if I can get them here, also see all these strange oils and stuff.

Yeah I'd love to see more recipes.
