Keep it very simple...hogfish has a such a delicate taste, it is very easy to overpower. The couple times I have been lucky enough to catch them, I usually just saute in some butter and squeeze lemon juice over it. Don't cover it with seasonings or that will be all you taste.

I catch them all the time. They are consider by catches. I steam my hogfish with some Ginger and once it is done drizzle some soy sauce. Cook some garlic with vegatable oil and once it gets hot pour it over the steamed fish.

GO4EM receipe, chop fish in half and deep fry. So simple.

Egg wash, then coat with Panko breadcrumbs. Pan fry in 1/2 butter, 1/2 olive oil. Serve with a lemon wedge, side of favorite veggies and rice pilaf.
A friend turned me onto the Panko breadcrumbs...never heard of them before, they are fantastic.

Spinkle a little garlic powder, onion powder and black pepper. Top with couple strips of bacon and bake whole as this will add a lot of flavor.(Do not overcook, delicate meat). Use real melted butter and real lemon juice. The meat will just melt in your mouth. My favorite fish of all time.
