Iguana stew
1 iguana. vinegar. lime juice. 1 tsp. sea salt. 1 tsp. black pepper. 1 small ball recardo. 2 onions. 2 cloves garlic .1 tsp. cilantro. 1 sweet pepper. coconut oil. 1/2 lb. carrots. 1/2 lb. cabbage. 1/4 lb. tomato.... skin, clean and chop iguana. wash thoroughly in vinegar and lime. rub in salt, black pepper, recardo, minced onion, minced garlic, cilantro and sweet pepper. let stand 20 minutes. place enough coconut oil in pot to cover bottom and heat it up. when hot, put in meat and keep adding a little water for about 30 minutes. add chopped carrots, cabbage and tomato, and cook another 30 minutes........ pass this recipe around south florida, and we can solve the iguana problem.
