Ever since Valentines Day when I made baked stuffed Maine lobster, I knew I had to try the breading on Pompano.
(for two large filets)
Ingredients..
20 Ritz Crackers
3 cups fresh grated Locatelli Parmesean cheese
1 stalk celery, 1/4 Vidalia onion,1 clove garlic (Mirepoix)
4 Tbsp butter (unsalted)
2 oz white wine
spices..
1/2 tsp salt
1/4 tsp white pepper
2 Tbsp paprika
1/4 tsp cayenne pepper
Start by grinding the ritz crackers in a food processor and set aside in mixing bowl.
Then, using the grater blade on the food processor, grind the Locatelli parmesean cheese. about 3 cups total, 2 cups to mix into breading and the last cup to go on top right before the broiler.
Next, take onions, celery, garilc and blend that in the food processor to make a fine Mirepoix.
Take the Mirepoix and saute with the 3 Tbsp butter (I use unsalted) until soft. Set aside to cool.
When cool. add the ritz crackers bread crumbs, 2 cups cheese, add spices, and 1 0z wine. Mix with a tablespoon by folding ingredients into each other. It`ll be a wet crumb mix.
Preheat oven to 325%. Take 1 Tbsp butter and melt it in microwave, spread on bottom of cooking pan/baking sheet. Place Pompano fillets so thicker parts face AWAY from each other to ensure proper cooking. Spread bread crumb mixture over fish in even 1/4 layer, but loose, do not pack. Add 1 oz White wine to pan around fish to keep it moist.
Bake for about 20 minutes (the butter will start bubbling at the edges. Remove from oven.
Turn oven to broil (HI), add remaining cheese over top of fish, and broil until it starts to brown.

This is the traditional bread crumb mixture that is used with Maine lobster. So if you get the urge, boil a whole lobster until done (I recommend at least a 3 lber and male) Break claws off and set aside. Split lobster whole from underside and spread open. Use knife to cut slits across the tail so it won`t curl, remove brain. Then take out tail meat, chop, and place back in tail section. Crack open claws and remove the meat, chop and place in cavity section, top with Ritz crumb mixture and bake 10 min. Add parmesean cheese on top and broil until brown.
