Hello,
I'm going up to Vero Beach, FL (Indian River Shores) and hope to do some surf casting and was waondering what type of generic bait I could use for a full day of fishing, shrimp?

Shrimp that is fresh Dead or Alive or better yet you may do well with Sand Fleas, if you own a rake you should be able to findssome in the area.
As for bait in the surf rig a rod with a sabikiki and drag it through the tough use as little of wieght as possible so you can work it up and down you be might be able to catch some bait, at least small runners or something, use them live or Cut.
If you have a cast net you should bring it and throw it at the backwash at the drop were the wave recedes, always little bait fish there.
You should also throw plugs, Lures, Gotchas, spoons in the surf should be fish in the surf. I like Xraps, Yousuris and Jigs tiped with shrimp.
